- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh thyme, chopped
- 4 large potatoes, peeled and cubed
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- In a pot, boil the cubed potatoes until tender, then drain and mash with butter, salt, and pepper.
- In a skillet, heat olive oil over medium heat. Add the garlic and cook until fragrant.
- Add the shrimp and paprika, cooking until the shrimp turns pink.
- Stir in the heavy cream and Parmesan cheese, bringing it to a simmer. Add fresh thyme and adjust seasoning.
- Serve the garlic shrimp over the mashed potatoes and enjoy.
Notes
For added zest, consider squeezing a bit of lemon juice over the dish before serving. Leftovers can be stored in an airtight container for up to 2-3 days.
