Creamy Garlic Shrimp Over Mashed Potatoes

Ingredients

  • 1 pound shrimp, peeled and deveined

  • 1 cup heavy cream

  • 4 large potatoes, peeled and cubed
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a pot, boil the cubed potatoes until tender, then drain and mash with butter, salt, and pepper.
  2. In a skillet, heat olive oil over medium heat. Add the garlic and cook until fragrant.
  3. Add the shrimp and paprika, cooking until the shrimp turns pink.
  4. Stir in the heavy cream and Parmesan cheese, bringing it to a simmer. Add fresh thyme and adjust seasoning.
  5. Serve the garlic shrimp over the mashed potatoes and enjoy.

Notes

For added zest, consider squeezing a bit of lemon juice over the dish before serving. Leftovers can be stored in an airtight container for up to 2-3 days.
