Instructions
- In a large pan, toast the orzo over medium heat for a couple of minutes until lightly golden.
- Add the broth to the pan and bring to a boil.
- Reduce heat and let the orzo simmer for about 10-12 minutes, or until tender.
- Once cooked, stir in the fresh lemon juice, grated Parmesan, and butter.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
