Ingredients

  • 2 cups cooked chicken (shredded)
  • 1 cup broccoli (chopped)
  • 1 cup cauliflower (riced; fresh or frozen)
  • 1 cup cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1/2 cup green onions (chopped for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, blend the softened cream cheese and chicken broth together with the garlic powder, onion powder, salt, and pepper until smooth.
  3. Fold in the shredded chicken, chopped broccoli, and riced cauliflower until everything is well-coated.
  4. Pour the mixture into a greased casserole dish and spread it evenly.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake in the oven for 25-30 minutes or until heated through and the cheese is bubbling.
  7. Garnish with chopped green onions before serving.
