Creamy Marry Me Chicken Ramen

A comforting twist on traditional ramen featuring tender chicken in a rich, creamy sauce with delightful toppings.

Ingredients

  • 2 chicken breasts
  • 1/3 cup all-purpose flour
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 8 sun-dried tomatoes, sliced
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp dried oregano
  • 1/2 tbsp red chili flakes
  • 2 1/2 cups chicken stock
  • 1 1/4 cups single cream
  • 2 tbsp grated parmesan cheese (plus more for serving)
  • 1/2 tsp ground black pepper
  • 1/2 tsp flaky salt
  • 1/2 tsp sugar
  • 7 oz ramen noodles
  • Fresh cilantro
  • Bean sprouts
  • Edamame beans
  • Scallions
  • Chili oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Dredge the chicken breasts in flour, shaking off any extra.
  3. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
  4. In the same skillet, add minced garlic and sliced sun-dried tomatoes. Cook for about 1-2 minutes until fragrant.
  5. Stir in smoked paprika, dried oregano, red chili flakes, salt, and sugar. Mix well.
  6. Pour in the chicken stock and bring the mixture to a boil. Reduce heat and let it simmer for 5 minutes.
  7. Add the single cream and grated Parmesan cheese, then stir until combined.
  8. Return the chicken to the skillet, cover, and let it simmer for an additional 10 minutes.
  9. Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  10. Once the chicken is cooked, remove it and slice it.
  11. To serve, place ramen noodles in a bowl, top with the creamy sauce, sliced chicken, and garnish with cilantro, bean sprouts, edamame beans, scallions, and a drizzle of chili oil.

Notes

For extra flavor, marinate the chicken in garlic and herbs for an hour before cooking. You can use leftover rotisserie chicken to save time.
