- 4 boneless skinless chicken breasts (sliced in half)
- 4 tablespoons olive oil (divided)
- 3 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes
- 1/3 cup Kalamata olives (sliced)
- 2 cups mushrooms
- 1/2 cup heavy cream
- 1/2 cup chicken stock
- 1 cup Parmesan cheese (freshly grated)
- 2 cups fresh spinach
Instructions
- Prepare the Flour Mixture: In a bowl, combine flour, paprika, 1 teaspoon of thyme, 1 teaspoon of oregano, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix well.
- Season the Chicken: Coat chicken slices with remaining salt, pepper, oregano, thyme, and chili flakes.
- Dredge the Chicken: Dredge chicken pieces in the flour mixture, ensuring full coverage.
- Cook the Chicken: Heat 2 tablespoons of olive oil in a skillet and cook the chicken for 3-5 minutes on each side until seared. Transfer to a plate.
- Sauté the Vegetables: In the same skillet, add remaining olive oil, garlic, sun-dried tomatoes, Kalamata olives, and mushrooms. Cook for 3-5 minutes.
- Make the Creamy Sauce: Pour in heavy cream, chicken stock, and Parmesan cheese, adding spinach and a pinch of salt and pepper. Mix well.
- Simmer the Sauce: Allow sauce to thicken, then add chicken back to skillet and cook until internal temperature is 165°F.
- Taste and Adjust Seasonings: Taste the sauce and adjust seasonings as needed.
- Serve: Plate the Creamy Mushroom Chicken and enjoy warm.
