Creamy Smothered Chicken and Rice

Ingredients

  • 4 chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 cup frozen peas (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt, pepper, and paprika, then add to the skillet. Cook until browned on both sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the chopped onion and garlic, sautéing until fragrant.
  4. Stir in the rice, chicken broth, and heavy cream. Bring to a simmer.
  5. Return the chicken to the skillet, cover, and reduce heat to low.
  6. Cook for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  7. If using, stir in the peas during the last 5 minutes of cooking.
  8. Serve warm and enjoy your creamy comfort food!

Notes

For extra flavor, marinate the chicken in the spices for a few hours before cooking. You can substitute heavy cream with whole milk for a lighter version.
