- 1 can of tomatoes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or milk
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Fresh basil, for garnish
Instructions
- In a pot, heat olive oil over medium heat and sauté chopped onions and minced garlic until translucent.
- Add the canned tomatoes, salt, pepper, and vegetable broth. Simmer for about 20 minutes.
- Use an immersion blender to blend the soup until smooth.
- Stir in heavy cream or milk and warm through.
- Serve hot, possibly with a grilled cheese sandwich for a comforting meal.
Notes
For extra flavor, consider adding a little sugar to balance the acidity, or experiment with herbs like oregano or thyme.
