- 1 lb chicken breast, cooked and shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: cilantro, lime, shredded cheese
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the shredded chicken, white beans, and chicken broth.
- Stir in the cumin and chili powder, and season with salt and pepper.
- Bring to a simmer and stir in the heavy cream.
- Cook for an additional 10 minutes.
- Serve hot, topped with cilantro, lime, and cheese if desired.
Notes
Use rotisserie chicken for a quicker option. Adjust seasonings for desired heat; add more vegetables for added nutrition.
