Instructions
- Preheat the oven to 375°F (190°C).
- Lightly steam the cauliflower, broccoli, and carrots until just tender, about 5-7 minutes.
- In a saucepan, melt butter over medium heat. Add flour, and whisk for about 1 minute to form a roux.
- Gradually add milk, whisking continuously until the mixture thickens.
- Stir in shredded cheese, garlic powder, onion powder, salt, and pepper.
- Combine the steamed vegetables with the cheese sauce.
- Pour the mixture into a baking dish and top with breadcrumbs if desired.
- Bake for 25-30 minutes, until the casserole is bubbling and golden.
- Serve warm and enjoy your cozy winter dish!
Notes
For added flavor, mix in some cooked chicken or turkey. You can use any combination of vegetables, such as spinach, bell peppers, or zucchini. To make it lighter, use reduced-fat cheese or milk. This casserole can be made ahead of time and also freezes well.
