- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 10 corn tortillas
- 1 cup pepper jack cheese, shredded
- Olive oil or cooking spray
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mash the black beans with cumin, chili powder, salt, and pepper.
- Take a corn tortilla and add a spoonful of the black bean mixture and a handful of pepper jack cheese.
- Fold the tortilla in half and place it on a baking sheet.
- Repeat with the remaining tortillas.
- Lightly brush or spray the tops with olive oil.
- Bake in the preheated oven for 15-20 minutes, until the tortillas are crispy and golden-brown, and the cheese is melted.
- Serve warm with your favorite toppings.
