Crispy Black Bean Tacos

Delicious and healthy crispy black bean tacos, easy to prepare and packed with flavor.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 10 corn tortillas
  • 1 cup pepper jack cheese, shredded
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mash the black beans with cumin, chili powder, salt, and pepper.
  3. Take a corn tortilla and add a spoonful of the black bean mixture and a handful of pepper jack cheese.
  4. Fold the tortilla in half and place it on a baking sheet.
  5. Repeat with the remaining tortillas.
  6. Lightly brush or spray the tops with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, until the tortillas are crispy and golden-brown, and the cheese is melted.
  8. Serve warm with your favorite toppings.
