- 4 chicken breasts, boneless and skinless
- 1 cup dill pickle juice
- 1 cup breadcrumbs (preferably seasoned)
- ½ cup grated Parmesan cheese
- 2 large eggs
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Cooking oil (for frying)
Instructions
- In a large bowl, combine the chicken breasts and dill pickle juice. Marinate in the refrigerator for at least 30 minutes.
- Set up a breading station with three bowls: one with flour seasoned with salt, pepper, and garlic powder, another with whisked eggs, and the last with breadcrumbs and Parmesan cheese.
- Heat cooking oil in a skillet over medium heat.
- Remove chicken from marinade, shaking off excess. Dredge in flour, dip in egg, then coat with breadcrumbs.
- Fry chicken in hot oil for 5–7 minutes on each side until golden brown and fully cooked.
- Drain excess oil on paper towels and let rest for 5–10 minutes before serving.
- Serve hot, or cool and store for later.
Notes
For added flavor, consider mixing in fresh herbs or spices into the breadcrumb mixture.
