Crispy Dill Pickle Parmesan Chicken

  • 4 chicken breasts, boneless and skinless
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs (preferably seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking oil (for frying)

Instructions

  1. In a large bowl, combine the chicken breasts and dill pickle juice. Marinate in the refrigerator for at least 30 minutes.
  2. Set up a breading station with three bowls: one with flour seasoned with salt, pepper, and garlic powder, another with whisked eggs, and the last with breadcrumbs and Parmesan cheese.
  3. Heat cooking oil in a skillet over medium heat.
  4. Remove chicken from marinade, shaking off excess. Dredge in flour, dip in egg, then coat with breadcrumbs.
  5. Fry chicken in hot oil for 5–7 minutes on each side until golden brown and fully cooked.
  6. Drain excess oil on paper towels and let rest for 5–10 minutes before serving.
  7. Serve hot, or cool and store for later.

Notes

For added flavor, consider mixing in fresh herbs or spices into the breadcrumb mixture.
