- 1 pound 90/10 ground beef
- 1/2 medium onion, finely chopped
- 2 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup water or beef broth, as needed
- Salt to taste, as needed
- 8 (6 inch) taco size flour tortillas
- 2 to 3 cups mozzarella cheese, shredded
- Avocado or vegetable oil
- Fresh cilantro, finely chopped (for garnish)
Instructions
- Heat about 1 tablespoon of oil in a large skillet over medium heat. Add the onions and cook until softened, about 2-3 minutes.
- Add the ground beef and use a large spoon to break it up, cooking until browned, about 4-5 minutes.
- Mix in the tomato paste and then add the taco seasoning. Stir in water or beef broth if the filling appears dry, and cook until fully cooked and most of the liquid has evaporated, about 3-4 minutes. Season with salt if needed.
- On a clean work surface, place down a tortilla. On the top half, add about 1 1/2 to 2 tablespoons of mozzarella cheese and a portion of the beef filling. Top with more cheese.
- Fold the bottom half of the tortilla over the filling and gently press to seal.
- Transfer the assembled taco to a large baking sheet and repeat until all tacos are filled.
- Heat 3-4 tablespoons of oil in a large skillet over medium heat. Pan-fry the tacos in batches, about 1 minute per side, or until golden brown. Transfer to a wire cooling rack.
- Garnish the tacos with fresh cilantro and serve immediately while hot and crispy.
Notes
For a healthier option, use ground turkey or chicken and try corn tortillas for a gluten-free version. Customize toppings for a fun meal.
