Crock Pot Chicken and Rice

Ingredients

  • 2 cups of chicken breast
  • 1 cup of rice
  • 4 cups of chicken broth
  • 1 cup of shredded cheese
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: vegetables like peas or carrots

Instructions

  1. Place the chicken, rice, onion, garlic, and chicken broth in the Crock Pot.
  2. Season with salt and pepper.
  3. Cover and cook on low for 360 minutes (6-8 hours) or on high for 240 minutes (3-4 hours).
  4. About 15 minutes before serving, add the cheese and stir until melted.
  5. If using, add in any additional vegetables and cook until tender.
  6. Serve warm.

Notes

For added flavor, sauté the onion and garlic before adding them to the Crock Pot. This dish can be modified with different proteins or vegetables.
