Ingredients

  • 34 lbs beef chuck roast
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 sprigs fresh thyme (optional)

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Add the chopped carrots, potatoes, onion, and garlic around the roast.
  3. Pour in the beef broth and Worcestershire sauce, then season with salt, pepper, and thyme.
  4. Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the meat is tender.
  5. For optional gravy, remove the roast and vegetables after cooking, and whisk together the juices in the slow cooker with a little cornstarch on the stovetop until thickened.
  6. Serve the roast with vegetables and gravy.

Notes

For extra flavor, sear the beef roast in a skillet before placing it in the crock pot. Feel free to add other vegetables like celery or parsnips for a twist.
