- 3–4 lbs beef chuck roast
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 sprigs fresh thyme (optional)
Instructions
- Place the beef chuck roast in the slow cooker.
- Add the chopped carrots, potatoes, onion, and garlic around the roast.
- Pour in the beef broth and Worcestershire sauce, then season with salt, pepper, and thyme.
- Cover and cook on low for 480-600 minutes or on high for 240-300 minutes, until the meat is tender.
- For optional gravy, remove the roast and vegetables after cooking, and whisk together the juices in the slow cooker with a little cornstarch on the stovetop until thickened.
- Serve the roast with vegetables and gravy.
Notes
For extra flavor, sear the beef roast in a skillet before placing it in the crock pot. Feel free to add other vegetables like celery or parsnips for a twist.
