- 1 pound ground beef
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 onion, sliced
- 2 cups beef broth
- 1 packet French onion soup mix
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the meatball mixture by combining ground beef, breadcrumbs, grated Parmesan, egg, salt, and pepper in a large bowl. Mix well but do not overmix.
- Shape the mixture into small meatballs and place them in the bottom of a crockpot.
- In a separate bowl, combine sliced onions with beef broth and French onion soup mix. Stir to combine.
- Pour the onion and broth mixture over the meatballs in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- When done, check meatballs for doneness, sprinkle with parsley, and serve hot with broth.
Notes
Tip: Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2-3 months.
