Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 onion, sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the meatball mixture by combining ground beef, breadcrumbs, grated Parmesan, egg, salt, and pepper in a large bowl. Mix well but do not overmix.
  2. Shape the mixture into small meatballs and place them in the bottom of a crockpot.
  3. In a separate bowl, combine sliced onions with beef broth and French onion soup mix. Stir to combine.
  4. Pour the onion and broth mixture over the meatballs in the crockpot.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. When done, check meatballs for doneness, sprinkle with parsley, and serve hot with broth.

Tip: Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 2-3 months.
