- 4 boneless, skinless chicken breasts
- 2 cups small potatoes, halved
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the small potatoes and cut them in half. Place them at the bottom of the crockpot.
- In a medium bowl, combine the minced garlic, grated Parmesan cheese, Italian seasoning, salt, black pepper, and olive oil. Stir in the chicken broth until well-blended.
- Place the chicken breasts on top of the halved potatoes in the crockpot. Pour the garlic-Parmesan mixture over the chicken, ensuring it’s well-coated.
- Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken reaches 165°F (75°C).
- Once cooked, sprinkle the dish with fresh parsley before serving.
Notes
For added flavor, you can customize spices or add leftover vegetables. Make sure to check for doneness with a meat thermometer.
