Crockpot Garlic Parmesan Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 2 cups small potatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the small potatoes and cut them in half. Place them at the bottom of the crockpot.
  2. In a medium bowl, combine the minced garlic, grated Parmesan cheese, Italian seasoning, salt, black pepper, and olive oil. Stir in the chicken broth until well-blended.
  3. Place the chicken breasts on top of the halved potatoes in the crockpot. Pour the garlic-Parmesan mixture over the chicken, ensuring it’s well-coated.
  4. Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken reaches 165°F (75°C).
  5. Once cooked, sprinkle the dish with fresh parsley before serving.

Notes

For added flavor, you can customize spices or add leftover vegetables. Make sure to check for doneness with a meat thermometer.
