Ingredients
1 lb ground beef or turkey
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn, drained
8 oz cream cheese, softened
2 cups shredded cheddar cheese, divided
2 cups crushed tortilla chips
Optional: diced onion, bell peppers, green chiles
Instructions
1. Brown ground beef or turkey in a skillet over medium heat; drain excess fat.
2. Stir in taco seasoning according to packet instructions.
3. Spray the inside of the crockpot with non-stick spray.
4. Spread crushed tortilla chips evenly across the bottom.
5. Layer the seasoned meat mixture over the chips.
6. Add diced tomatoes, black beans, and corn evenly on top.
7. Dollop softened cream cheese over the vegetables.
8. Sprinkle half the shredded cheddar cheese over the top.
9. Cover and cook on low for 3-4 hours or on high for 2-3 hours, until heated through and bubbly.
10. During the last 30 minutes, sprinkle the remaining cheese on top and let it melt.
11. Serve hot with your favorite toppings like sour cream, avocado, or salsa.
Notes
For a vegetarian version, replace meat with extra beans or lentils.
To make it spicier, add jalapeños or cayenne pepper.
Add condensed soup for a creamier texture.
Leftovers store well for 3-4 days in the fridge or can be frozen for future meals.
