Homemade Croissants

Delightful, flaky pastries that are perfect for breakfast or a snack, made fresh at home.

Ingredients

  • 18 oz all-purpose flour (just over 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt or table salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp unsalted butter, softened (use European-style butter)
  • 1¼ cups cold, unsalted butter (use European-style butter only)
  • 1 large egg
  • 1 egg yolk
  • Pinch of salt

Instructions

  1. In a bowl, mix flour, sugar, salt, and yeast.
  2. Add cold water and milk to the mixture.
  3. Mix until combined and knead the dough for about 3-5 minutes.
  4. Form the dough into a ball, cover it, and let it rise for about 1 hour, or until it doubles in size.
  5. Roll out the dough into a rectangle on a floured surface.
  6. Place the cold, unsalted butter in the center of the dough.
  7. Fold the edges of the dough over the butter to encase it completely.
  8. Roll the dough out gently and then fold it three times like a letter. Repeat this process two more times, chilling the dough for 30 minutes between each fold.
  9. Roll the laminated dough into a large rectangle.
  10. Cut the dough into triangles.
  11. Starting from the base of each triangle, roll it up towards the tip to form the croissant shape.
  12. Place the shaped croissants on a baking sheet lined with parchment paper.
  13. Preheat the oven to 400°F (200°C).
  14. Let the croissants rise for another hour.
  15. Beat the egg and yolk together with a pinch of salt, and brush this mixture on top of the croissants.
  16. Bake for 15-20 minutes, or until golden brown.

Notes

Serve with butter, jam, honey, or chocolate. Best enjoyed fresh out of the oven. Store in an airtight container at room temperature for up to 2 days or freeze for up to 2 months.
