Simple Cucumber Salad

A quick and refreshing cucumber salad, perfect for hot days and pairs well with many meals.

Ingredients

  • 3 medium cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons white vinegar or apple cider vinegar
  • 1 tablespoon lemon juice (optional)
  • 1 teaspoon sugar or honey
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill or 1 teaspoon dried dill
  • 1 small clove garlic, minced (optional)

Instructions

  1. Wash and thinly slice the cucumbers. Place them in a large bowl.
  2. Thinly slice the red onion and add to the bowl with cucumbers.
  3. In a small bowl, whisk vinegar, lemon juice (if using), sugar, olive oil, salt, pepper, and minced garlic.
  4. Pour the dressing over the cucumbers and onions.
  5. Add the dill and gently toss to coat all pieces.
  6. Let the salad sit 10–15 minutes before serving so the flavors mix. Taste and add a little more salt or pepper if needed.

Notes

For a creamier salad, substitute Greek yogurt. Serve chilled or at room temperature.
