Cucumber Tomato Salad

Ingredients

  • 2 medium cucumbers, thinly sliced (or 1 English cucumber)
  • 2 cups cherry or grape tomatoes, halved (or 3 medium tomatoes, chopped)
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh basil or parsley (optional)
  • 1/2 teaspoon sugar or honey (optional, to balance acidity)

Instructions

  1. Wash all vegetables.
  2. Slice cucumbers thin and place them in a large bowl.
  3. Halve or chop the tomatoes and add to the bowl.
  4. Thinly slice the red onion and add it with the herbs if you use them.
  5. In a small bowl, whisk olive oil, lemon juice, apple cider vinegar, salt, pepper, and sugar or honey if using.
  6. Pour the dressing over the vegetables. Toss gently to coat.
  7. Taste and add more salt or lemon if needed.
  8. Let the salad sit 5-10 minutes before serving for the flavors to join. Chill if you like it cold.

Notes

Use ripe tomatoes for best flavor and slice cucumbers evenly for a consistent bite.
