Delightful Hobo Casserole

A hearty one-dish casserole that combines ground beef, potatoes, and creamy mushroom soup, topped with melted cheddar cheese.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and chopped onion over medium heat until browned, about 5 to 7 minutes. Drain excess fat.
  3. Grease a baking dish and layer half of the sliced potatoes on the bottom.
  4. Add half of the cooked beef and onion mixture on top of the potatoes.
  5. Pour half of the cream of mushroom soup over the beef layer.
  6. Sprinkle a layer of shredded cheddar cheese over the soup.
  7. Repeat the layering process with the remaining potatoes, beef mixture, soup, and cheese, finishing with cheese on top.
  8. Cover the dish with aluminum foil and bake for 1 hour.
  9. Remove foil and bake for an additional 15 minutes until cheese is melted and golden.
  10. Let it cool for a few minutes before serving.

Notes

Pairs well with a green salad or crusty bread. Consider adding toppings like green onions or jalapeños for extra flavor.
