Ingredients
Scale
- 1 homemade single pie crust
- 1/4 teaspoon lemon zest
- Juice from half a lemon (about 2 tablespoons)
- 5 pounds apples (about 11 large apples)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon kosher salt
- 1 & 1/2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon cardamom (optional)
- 1 teaspoon vanilla extract
- 1 & 1/2 cups all-purpose flour (for crumble)
- 1/3 cup granulated sugar (for crumble)
- 3/4 cup brown sugar (packed, for crumble)
- 1/2 teaspoon kosher salt (for crumble)
- 3/4 cup butter (melted)
Instructions
- Choose Your Apples: Start by selecting a mix of apples. Use Granny Smith for tartness, Honeycrisp for sweetness, and Golden Delicious for a soft texture.
- Make the Filling: Zest the lemon and squeeze the juice into a large skillet.
- Prepare Apples: Peel and slice the apples, adding them to the skillet with lemon juice.
- Cook Apples: Add sugars, flour, salt, cinnamon, nutmeg, and cardamom into the skillet with the apples and cook on medium heat for about 20 minutes.
- Cool the Filling: After cooking, remove from heat, stir in vanilla extract, and set aside to cool.
- Prepare Pie Crust: Roll out your homemade pie crust and fit it into a pie dish, then chill in the refrigerator for about 15 minutes.
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Make Crumble: Mix dry ingredients for the crumble, melt the butter, and stir until crumbly. Chill the mixture.
- Assemble Pie: Fill the chilled pie crust with the cooled apple mixture, then cover with crumble mixture.
- Bake Pie: Bake at 425°F for the first 15 minutes, then reduce to 350°F (175°C) and bake for an additional 10 minutes.
- Finish Baking: Sprinkle leftover crumble on top and bake for another 25-35 minutes until golden brown.
- Cool and Serve: Let the pie cool for at least 4 hours before slicing. Serve warm or at room temperature, optionally with ice cream or caramel sauce.
Notes
