- 1/2 lb mini sweet peppers
- 1/4 cup fat-free feta cheese
- 2 light Laughing Cow cheddar cheese wedges
- Everything bagel seasoning, to taste
- 1/2 tsp chili crunch
- Oil drained
- Optional: green onions or fresh herbs like parsley or cilantro for garnish
Instructions
- Slice the mini peppers in half lengthwise and remove seeds. Lay them out on a platter.
- In a small bowl, mix the fat-free feta and light Laughing Cow cheddar cheese wedges.
- Microwave the cheese mixture for about 30 seconds to soften, then mix in everything bagel seasoning and chili crunch.
- Fill each pepper half with the cheese mixture using a spoon.
- Serve immediately and garnish with herbs or green onions if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in the microwave if desired.
