Easy Cheesy Potato Burritos

Ingredients

  • 4 large flour tortillas
  • 2 cups tater tots, cooked and crispy
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup sour cream
  • 1 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat. Stir in the taco seasoning and a splash of water, cooking until well combined and heated through.
  2. To assemble the burritos, lay a tortilla flat and add a layer of cooked tater tots, seasoned beef, shredded cheese, a dollop of sour cream, and some salsa.
  3. Roll the tortilla tightly, folding in the sides to secure the filling.
  4. Place the burritos seam-side down in a baking dish.
  5. Optionally, sprinkle extra cheese on top and cover with foil.
  6. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until heated through and the cheese is melted.
  7. Serve hot and enjoy!

Notes

Make sure the tater tots are crispy for added texture inside the burrito. Feel free to customize the filling with your favorite ingredients.
