Easy Crockpot Chuck Roast

Ingredients

  • 34 lbs chuck roast
  • 1 cup beef broth
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chuck roast in the crockpot.
  2. Add the sliced onions, minced garlic, carrots, and potatoes around the roast.
  3. Pour the beef broth over the top.
  4. Sprinkle with dried thyme, salt, and pepper.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Serve warm with the vegetables.

Notes

For more flavor, sear the chuck roast before placing it in the crockpot. Add other vegetables or adjust seasoning to taste.
