Ingredients

- 3–4 lbs chuck roast
- 1 cup beef broth
- 1 onion, sliced
- 3 cloves garlic, minced
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the chuck roast in the crockpot.
- Add the sliced onions, minced garlic, carrots, and potatoes around the roast.
- Pour the beef broth over the top.
- Sprinkle with dried thyme, salt, and pepper.
- Cover and cook on low for 8 hours or until the meat is tender.
- Serve warm with the vegetables.
Notes
For more flavor, sear the chuck roast before placing it in the crockpot. Add other vegetables or adjust seasoning to taste.
