- 2 cups cooked shredded chicken
- 1 can white beans (like cannellini or great northern)
- 1 can corn (drained)
- 1 can diced green chilies
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 4 cups chicken broth

- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro, lime
Instructions
- In a crockpot, combine all the ingredients: shredded chicken, white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine everything well.
- Cover the crockpot and choose to cook on low for 6-8 hours or on high for 3-4 hours.
- Once the cooking time is done, taste the soup and adjust the seasoning if necessary.
- Serve the soup hot with optional toppings like sour cream, shredded cheese, cilantro, or a squeeze of lime.

You can customize spices and add more vegetables based on your preferences. This soup can also be made ahead of time.
