Easy Crockpot White Chicken Chili Soup

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can white beans (like cannellini or great northern)
  • 1 can corn (drained)
  • 1 can diced green chilies
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro, lime

Instructions

  1. In a crockpot, combine all the ingredients: shredded chicken, white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir to combine everything well.
  3. Cover the crockpot and choose to cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once the cooking time is done, taste the soup and adjust the seasoning if necessary.
  5. Serve the soup hot with optional toppings like sour cream, shredded cheese, cilantro, or a squeeze of lime.
