- 4 large eggs
- 1 cup potatoes, diced
- 1 cup red bell peppers, diced
- 1 cup fresh spinach, chopped
- 1/2 onion, diced
- 1/2 cup cheese (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté onions and potatoes until the potatoes are tender.
- Add red peppers and spinach, cooking until the spinach is wilted.
- In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the vegetables in the skillet.
- Cook for a few minutes until the edges set, then transfer to the oven.
- Bake for 15-20 minutes until the frittata is fully set and slightly golden on top.
- Let cool slightly, slice, and serve warm.
