Easy Frittata with Potatoes, Red Peppers, and Spinach

Ingredients

  • 1 cup potatoes, diced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions and potatoes until the potatoes are tender.
  3. Add red peppers and spinach, cooking until the spinach is wilted.
  4. In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the vegetables in the skillet.
  5. Cook for a few minutes until the edges set, then transfer to the oven.
  6. Bake for 15-20 minutes until the frittata is fully set and slightly golden on top.
  7. Let cool slightly, slice, and serve warm.
