Easy Lemon Curd

A bright and tangy lemon curd that’s perfect for spreading on toast or using as a filling for pastries.

  • Total Time: 20 minutes
  • Yield: 2 cups 1x

Ingredients

Scale
  • 1 cup freshly squeezed lemon juice
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter
  • 1 tablespoon lemon zest

Instructions

  1. Whisk together the lemon juice, sugar, and eggs in a medium saucepan over medium heat.
  2. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10-15 minutes.
  3. Remove from heat and stir in the butter and lemon zest until smooth.
  4. Pour the curd into a jar or bowl and let cool.
  5. Store in the refrigerator for up to 1 week.

Notes

For the best flavor, use fresh lemon juice. Stir constantly to prevent sticking, and consider straining for a smoother texture.
