Easy Low Carb Chicken Casserole

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 1 cup broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (cheddar or your favorite type)
  • 1 cup heavy cream or sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Optional: Green onions or parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the broccoli by cutting it into small florets or thaw frozen broccoli.
  3. Cook cauliflower rice in a pan with olive oil or butter for about 5 minutes until tender.
  4. In a large bowl, combine the cooked chicken, broccoli, cauliflower rice, and cheese. Mix well.
  5. Add heavy cream or sour cream, garlic powder, onion powder, paprika, salt, and pepper. Mix until combined.
  6. Transfer the mixture into a greased 9×13-inch baking dish.
  7. Top with more cheese if desired.
  8. Bake for 30-35 minutes until the top is golden and bubbly.
  9. Allow to cool for a few minutes before serving.
