Easy Shepherd’s Pie Casserole

A comforting casserole made with ground beef, mixed vegetables, and creamy mashed potatoes, perfect for busy weeknights or family dinners.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper.
  5. Let the mixture simmer for 5-7 minutes until it thickens slightly.
  6. Transfer the beef mixture into a casserole dish, spreading it out evenly.
  7. Top the beef mixture with the prepared mashed potatoes, spreading them to cover the filling completely.
  8. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if you want.
  9. Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
  10. Let it cool for 5 minutes before serving.

Notes

Feel free to customize the vegetables or use leftover mashed potatoes. For a healthier option, substitute ground turkey or chicken.
