Easy Shepherd’s Pie Casserole

A comforting dish combining ground beef, vegetables, and creamy mashed potatoes, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until softened, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 5-7 minutes until thickened slightly.
  5. Transfer the beef mixture to a casserole dish and spread it evenly.
  6. Top with prepared mashed potatoes, spreading them to cover the filling completely.
  7. Dot the mashed potatoes with butter and sprinkle with cheddar cheese if using.
  8. Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
  9. Let it cool for 5 minutes before serving.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. To reheat, warm in the oven or microwave.
