Easy Shepherd’s Pie

A comforting and hearty dish combining savory meat and vegetables topped with creamy mashed potatoes, perfect for family gatherings or weeknight dinners.

Ingredients

  • 1 pound ground lamb or beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 pounds potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/2 cup grated cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Add the ground meat, cooking until browned; drain excess fat.
  4. Stir in the diced carrots and cook for a few minutes until softened.
  5. Add the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper; mix well.
  6. Pour in beef broth, bring to a simmer, and cook until thickened.
  7. Stir in frozen peas and cook for another 5 minutes, then remove from heat.
  8. Boil potatoes in salted water until tender; drain well.
  9. Mash potatoes with milk and butter until smooth; season with salt and pepper.
  10. If using, stir in cheddar cheese.
  11. Preheat oven to 400°F (200°C).
  12. Spread meat filling in a baking dish; top with mashed potatoes and create peaks.
  13. Bake for 20-25 minutes until golden brown.

Notes

Use leftover roasted meat for the filling to save time. For a vegetarian version, use lentils or chickpeas.
