- 1 pound ground lamb or beef
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 1 cup frozen peas
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 pounds potatoes, peeled and cut into chunks
- 1/2 cup milk
- 1/4 cup butter
- 1/2 cup grated cheddar cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the onion and garlic, cooking until softened.
- Add the ground meat, cooking until browned; drain excess fat.
- Stir in the diced carrots and cook for a few minutes until softened.
- Add the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper; mix well.
- Pour in beef broth, bring to a simmer, and cook until thickened.
- Stir in frozen peas and cook for another 5 minutes, then remove from heat.
- Boil potatoes in salted water until tender; drain well.
- Mash potatoes with milk and butter until smooth; season with salt and pepper.
- If using, stir in cheddar cheese.
- Preheat oven to 400°F (200°C).
- Spread meat filling in a baking dish; top with mashed potatoes and create peaks.
- Bake for 20-25 minutes until golden brown.
Notes
Use leftover roasted meat for the filling to save time. For a vegetarian version, use lentils or chickpeas.
