French Onion Chicken Rice Bake

  • 1 lb chicken breast, diced
  • 2 large onions, sliced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Gruyère or Swiss cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until caramelized, about 15-20 minutes.
  3. In a baking dish, combine cooked rice, diced chicken, caramelized onions, chicken broth, and heavy cream. Mix well and season with salt and pepper.
  4. Spread the mixture evenly and top with shredded cheese.
  5. Bake in the preheated oven for about 30-35 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
  6. Let it cool for a few minutes, then serve garnished with fresh parsley, if desired.

Notes
