- 2 cups cooked rice
- 1 lb chicken breast, diced
- 2 large onions, sliced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup Gruyère or Swiss cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until caramelized, about 15-20 minutes.
- In a baking dish, combine cooked rice, diced chicken, caramelized onions, chicken broth, and heavy cream. Mix well and season with salt and pepper.
- Spread the mixture evenly and top with shredded cheese.
- Bake in the preheated oven for about 30-35 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
- Let it cool for a few minutes, then serve garnished with fresh parsley, if desired.
Notes
You can substitute chicken with mushrooms for a vegetarian option. Store leftovers in the fridge for 3-4 days or freeze for up to 2 months.
