French Onion Ground Beef and Rice Casserole

Ingredients

  • 1 cup white rice
  • 1 can French onion soup
  • 1 cup shredded cheese (e.g., Swiss or mozzarella)
  • 1 onion, diced
  • 2 cups beef broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
  3. Add the ground beef to the skillet, breaking it apart, and cook until browned. Season with salt and pepper.
  4. Stir in the rice, French onion soup, and beef broth until well combined.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Top with shredded cheese.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool slightly before serving.

Notes

For added richness, mix in sautéed mushrooms or bell peppers when cooking the beef. You can also use ground turkey for a lighter option.
