Garlic Butter Chicken

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Toss the chicken, potatoes, and carrots into the slow cooker.
  2. In a bowl, combine melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over the chicken and vegetables in the slow cooker. Stir gently to coat all pieces.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Garnish with fresh parsley if desired. Plate it up and enjoy!

Notes

Serve hot with crusty bread or rice. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
