Ingredients
2 lbs boneless, skinless chicken breasts or thighs
6–8 cloves garlic, minced
1 (8 oz) block cream cheese, softened
1/2 cup chicken broth
1/2 cup grated Parmesan cheese, plus more for serving
1 tsp Italian seasoning
1/2 tsp onion powder
Salt and black pepper to taste
Fresh parsley or chives, chopped, for garnish
Instructions
1. Pat the chicken dry and season with salt and pepper.
2. In a small bowl, whisk together cream cheese, chicken broth, garlic, Parmesan, Italian seasoning, and onion powder until smooth.
3. Place the chicken in the slow cooker and pour the sauce mixture over it.
4. Cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is tender and cooked through.
5. Shred the chicken with two forks and stir into the sauce.
6. Garnish with fresh parsley or chives and extra Parmesan before serving.
Notes
Add red pepper flakes for heat.
Stir in spinach or sun-dried tomatoes during the last 30 minutes of cooking.
Add sautéed mushrooms for extra flavor.
Serve over pasta, polenta, or mashed potatoes.
