- 1 pound boneless, skinless chicken breast

- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream or whole milk
- 2 cups fresh spinach
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
- Fresh basil leaves, for garnish (optional)
Instructions
- Prepare the chicken by cutting it into bite-sized pieces.
- Sauté the onion in olive oil over medium heat for about 5 minutes, then add garlic and cook for another minute.
- Add chicken pieces, sprinkle with dried herbs, salt, and pepper, and cook for 6-8 minutes until browned.
- Pour in the diced tomatoes and chicken broth, stir, and bring to a gentle boil.
- Reduce heat to low, slowly add heavy cream or milk while stirring.
- Stir in fresh spinach and let it wilt for a couple of minutes; taste and adjust seasoning.
- Serve hot, garnished with Parmesan cheese and fresh basil if desired.
Notes
Customize the creaminess by adjusting the amount of cream. Feel free to add different vegetables or proteins based on preference.
