- 1 cup gluten-free flour blend
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 3 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- Combine the melted butter and granulated sugar in a mixing bowl. Mix well until smooth.
- Add the eggs, lemon juice, and lemon zest to the bowl. Stir until everything is well combined.
- Mix together the gluten-free flour, baking powder, and salt in another bowl.
- Slowly add the dry ingredients to the wet ingredients. Stir until just combined, being careful not to overmix.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar if desired, and cut into squares.
Notes
These lemon brownies can be served with vanilla ice cream or whipped cream for an extra treat. Store leftovers in an airtight container at room temperature for up to 3 days.
