- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup coconut sugar
- 1/2 cup maple syrup
- 1/2 cup lemon juice
- 1/4 cup coconut oil, melted
- 3 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a bowl, mix the almond flour, coconut flour, coconut sugar, baking powder, and salt.
- In another bowl, combine the eggs, maple syrup, lemon juice, melted coconut oil, and lemon zest.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before drizzling with a sweet and tangy lemon glaze.
Notes
Serve fresh or at room temperature, optionally drizzled with lemon glaze. Store in an airtight container for up to three days or refrigerate for a week.
