Gluten-Free Lemon Brownies

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/2 cup maple syrup
  • 1/2 cup lemon juice
  • 1/4 cup coconut oil, melted
  • 3 eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a bowl, mix the almond flour, coconut flour, coconut sugar, baking powder, and salt.
  3. In another bowl, combine the eggs, maple syrup, lemon juice, melted coconut oil, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cool before drizzling with a sweet and tangy lemon glaze.

Notes

Serve fresh or at room temperature, optionally drizzled with lemon glaze. Store in an airtight container for up to three days or refrigerate for a week.
