  • 1/2 Red onion, sliced
  • 1 Bell pepper, sliced
  • 1 cup Cooked quinoa or rice
  • 1/2 cup Tzatziki sauce (yogurt, cucumber, garlic, dill, lemon juice)

Instructions

  1. Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked.
  3. Prepare the tzatziki sauce by mixing yogurt with grated cucumber, minced garlic, chopped dill, and lemon juice.
  4. In a bowl, layer quinoa or rice, sliced grilled chicken, diced cucumbers, chopped tomatoes, sliced red onion, and bell peppers.
  5. Drizzle with tzatziki sauce before serving.

Notes

Use fresh herbs like parsley or dill to enhance the flavor. You can also add spinach, olives, or feta cheese for extra taste.
