Instructions
- Marinate chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until fully cooked, then let it rest and slice.
- Prepare the quinoa or rice according to package instructions.
- For the tzatziki sauce, mix Greek yogurt with grated cucumber, chopped dill, red wine vinegar, salt, and a drizzle of olive oil.
- Assemble the bowls with a base of quinoa or rice, topped with sliced chicken, chopped veggies (tomatoes, cucumber, red onion, bell peppers), and a generous dollop of tzatziki sauce.
- Serve and enjoy!
Notes
