Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil

  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, chopped
  • 1 bell pepper, diced
  • 1 cup quinoa or rice
  • 1 cup Greek yogurt
  • Fresh dill, chopped
  • 1 tablespoon red wine vinegar

Instructions

  1. Marinate chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked, then let it rest and slice.
  3. Prepare the quinoa or rice according to package instructions.
  4. For the tzatziki sauce, mix Greek yogurt with grated cucumber, chopped dill, red wine vinegar, salt, and a drizzle of olive oil.
  5. Assemble the bowls with a base of quinoa or rice, topped with sliced chicken, chopped veggies (tomatoes, cucumber, red onion, bell peppers), and a generous dollop of tzatziki sauce.
  6. Serve and enjoy!

Notes

Extra flavor can be achieved by adding herbs like oregano or parsley when marinating the chicken. Store ingredients separately for freshness.
