Instructions
- Cook the chicken breasts in a skillet over medium heat with olive oil, salt, and pepper until cooked through, about 7-8 minutes per side. Let them rest, then slice.
- Prepare the quinoa or rice according to package instructions.
- In a large bowl, combine cooked quinoa or rice with diced cucumber, bell pepper, cherry tomatoes, red onion, and spinach.
- Top the bowls with sliced chicken and crumbled feta cheese.
- Drizzle with tzatziki sauce and serve.
