Instructions
- In a large bowl, combine the finely diced cabbage, green onions, cucumbers, and chives.
- In a separate bowl, whisk together the Greek yogurt, lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss until well combined.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
Notes
For extra crunch, add sliced bell peppers or shredded carrots. Replace Greek yogurt with sour cream for a different flavor.
