Grilled Cheese Burrito

A fun twist on classic dishes that mixes the comfort of grilled cheese with the satisfying flavors of a burrito, perfect for a quick, cheesy meal.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain excess grease. Add taco seasoning and 1/4 cup water, then simmer for 5 minutes.
  2. Warm the tortillas on a dry skillet or in the microwave to make them more flexible.
  3. Lay a tortilla flat and layer it with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top with shredded cheddar and mozzarella.
  4. Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese. Place the burrito seam-side down and cook until the cheese melts and forms a crispy crust, about 3-4 minutes per side until golden brown.

Notes

Customize your fillings with veggies and try different cheeses for varied flavor. Don’t overstuff to prevent bursting during grilling.
