Ingredients

  • 8 flour or corn tortillas
  • 2 cups enchilada sauce

  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions until the beef is cooked through and onions are translucent (5-7 minutes).
  3. Add minced garlic, cumin, and chili powder to the skillet and sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas.
  6. Sprinkle shredded cheese on top of the sauce.
  7. Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool slightly before serving. Top with sour cream.

Notes
