- 1 lb lean ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add the ground beef and diced onions. Cook until the beef is browned and the onions are translucent, about 5-7 minutes.
- Add minced garlic, cumin, and chili powder to the beef mixture and sauté for about a minute.
- Spoon some of the beef mixture onto each tortilla, roll them tightly, and place seam-side down in a greased baking dish.
- Pour the enchilada sauce evenly over the top and sprinkle shredded cheese over the sauce.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown.
- Let cool for a few minutes before serving. Garnish with sour cream and additional toppings if desired.
Notes
For extra flavor, consider adding chopped bell peppers or black beans to the beef mixture. Warm your tortillas before filling to make them easier to roll.
