- 1 lb lean ground beef (93%)
- 2 medium sweet potatoes, peeled and diced
- 1 sliced avocado
- 1 cup cottage cheese
- 1 diced yellow onion
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp)
- 2 tbsp hot honey
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cinnamon
- Salt and pepper, to taste
- Optional: chopped cilantro, red pepper flakes, lime juice
Instructions
- Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast in the oven for 40–45 minutes, stirring halfway through.
- In a skillet, heat 1 tbsp olive oil over medium heat. Sauté the diced onion until soft, about 3–4 minutes.
- Add the ground beef to the skillet. Cook for 6–8 minutes, breaking the meat apart. Stir in taco seasoning, salt, and pepper, and continue to cook until browned.
- Assemble the bowls: start with sweet potatoes on the bottom, then add the cooked ground beef, avocado slices, and a scoop of cottage cheese.
- Drizzle hot honey generously over each bowl. If desired, add optional garnishes like chopped cilantro, red pepper flakes, or lime juice for extra flavor.
- Serve immediately and enjoy while warm.
Notes
Cut sweet potatoes into even sizes for even cooking. You can customize the protein or add other veggies.
