- 2 cups cooked rice
- 1 pound ground chicken
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add ground chicken and cook until it is browned and cooked through.
- Push the chicken to the side of the skillet, crack the eggs into the empty space, and scramble them.
- Stir in the mixed vegetables and cook until they are softened.
- Add the cooked rice and soy sauce, mixing well to combine everything.
- Season with salt and pepper, then stir in the chopped green onions before serving.
Notes
For the best texture, use cold, day-old rice. Feel free to customize the mixed vegetables and add chili sauce for heat.
