Ground Chicken Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 pound ground chicken
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat sesame oil over medium heat.
  2. Add ground chicken and cook until it is browned and cooked through.
  3. Push the chicken to the side of the skillet, crack the eggs into the empty space, and scramble them.
  4. Stir in the mixed vegetables and cook until they are softened.
  5. Add the cooked rice and soy sauce, mixing well to combine everything.
  6. Season with salt and pepper, then stir in the chopped green onions before serving.

Notes

For the best texture, use cold, day-old rice. Feel free to customize the mixed vegetables and add chili sauce for heat.
