Healthy Almond Joys

A delightful twist on the classic candy bar made with wholesome ingredients, providing a guilt-free treat that satisfies your sweet tooth.

Ingredients

Scale
  • 3 cups unsweetened finely shredded coconut
  • 1/4 cup maple syrup or honey
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract (Optional but recommended)
  • Pinch of sea salt (Optional but recommended)
  • 1 cup chocolate bars, chopped (or chocolate chips)
  • 2 tsp coconut oil
  • Raw almonds

Instructions

  1. Combine all coconut base ingredients in a food processor and process for about 40 seconds until sticky.
  2. Divide the coconut mixture among the cups of a mini muffin pan and press down firmly.
  3. Melt chocolate and 2 tsp coconut oil in a bowl, stirring until smooth.
  4. Pour melted chocolate over each coconut layer, smoothing it out, and place an almond in the center.
  5. Freeze for 3-4 hours, then remove from the pan and store in an airtight container in the freezer.

Notes

Enjoy these bites as a snack or dessert straight from the freezer. They also pair well with tea or coffee.
