- 1 cup whole wheat flour
- 1/2 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- Cooking spray
- Cinnamon sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with cooking spray.
- In a large bowl, mix together the flour, coconut sugar, baking powder, cinnamon, and salt.
- In another bowl, combine the applesauce, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 10-12 minutes, or until golden brown.
- Let cool slightly, then roll in cinnamon sugar before serving.
Notes
For a crunchier texture, bake for a couple of additional minutes. You can also experiment with different types of milk for a dairy-free option.
