Healthy Baked Churro Bites

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • Cooking spray
  • Cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with cooking spray.
  2. In a large bowl, mix together the flour, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the applesauce, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 10-12 minutes, or until golden brown.
  7. Let cool slightly, then roll in cinnamon sugar before serving.

Notes

For a crunchier texture, bake for a couple of additional minutes. You can also experiment with different types of milk for a dairy-free option.
